Here is a recipe that I found really pretty and very easy to do that I found on the site tousprimeurs.com. I preview the book!
You Will Need
500 g penne
1 eggplant
1 eggplant
300 g tomatoes, diced bacon
matches
shavings of Parmesan Garlic
olive oil
salt, pepper
A few "easy steps ...
Cut the eggplant into small pieces and cook them in olive oil in a skillet.
Add a little water to avoid burning.
Roast small lardons.Mettez all in the same pan and add the diced tomatoes.
Leave to simmer until your pasta is cooked. Add salt, pepper and some garlic. When your pasta is cooked, mix them with your preparation.
Serve and sprinkle with fine shavings of parmesan.
