Cutlets soubise



Hello world!

I take a little time off (very rare at this time) to deliver a family recipe that I tested this weekend: it cutlets "Soubise" . It's been months that I wanted to try and I did well!

You Will need ...

4 turkey cutlets
2 large white onions
150g grated cheese (Gruyere or county)
2 tablespoons of cream
Salt, pepper

dish very easy ..

Begin by first sauté onions in olive oil in a skillet until they are well caramelized. Book.

In the same pan, fry for a few minutes the turkey cutlets with salt and pepper.

Place turkey cutlets in a baking dish, cover with fresh cream. Then add the onions and cheese. Salt and pepper.

Bake for 20 minutes and it's ready!

Pumpkin Gratin ..


Although very busy at the moment, I am plunged back from the movie Julie & Julia about the life of Julia Child - a mythical figure of French cuisine in the United States, my great passion - cooking.

So last Sunday, returning home with 2kg of figs, apples and pears but also with a basket full of vegetables with a little pumpkin that I bought the watch out of curiosity at Monoprix I decided to prepare a small dish pumpkin! I always found these wonderful beans, but I did not know how to do it .. It's actually very easy and really delicious!

You Will Need ..

a Pumpkin

30 g Gouda

A Few Easy Steps ...

Preheat oven to 220 ° C.

You Will Need


500 g penne

1 eggplant

300 g tomatoes, diced bacon

matches

shavings of Parmesan Garlic

olive oil

salt, pepper


A few "easy steps ...

Cut the eggplant into small pieces and cook them in olive oil in a skillet.

Add a little water to avoid burning.

Roast small lardons.Mettez all in the same pan and add the diced tomatoes.

Leave to simmer until your pasta is cooked. Add salt, pepper and some garlic. When your pasta is cooked, mix them with your preparation.

Serve and sprinkle with fine shavings of parmesan.

Here's a simple recipe for delicious and really hungry for a snack ...

You Will Need ...

2 apples: 1 and 1 golden granny smith
125g flour 1
coffee spoon yeast
1 pinch of salt
2 large eggs
110g butter 175g
sugar

Preheat oven to 180 ° C.

Peel and cut apples into slices thin enough. Arrange in baking pan previously buttered.

Melt butter heat in a saucepan.

I'm back and feeling great!


I had the pleasure last week to invite to dinner my cousin Sophie who comes to study in Paris at the Lycée Saint Louis which I am myself former student. It was a long time ago already .. in 2003! Welcome to Paris, I decided to prepare a small meal "welcome" a beef stroganoff version of Jamie Oliver. It was delicious!


You Will Need ..


300g beef fillet
300g wild mushrooms
1 clove garlic 1 red onion
2 tablespoons of cream
a small piece of butter
zest a lemon parsley
salt, pepper


First cook garlic and red onion in a skillet with 1 tablespoon of olive oil for 10 minutes. Pour the browned onions and garlic in a bowl.

Meanwhile, cut the meat into fairly thin pieces and coat with salt, pepper and paprika. Return the pan to the fire with a good dose of olive oil and add mushrooms. After a few minutes, add the meat. Add the parsley, onions and butter.

After a few minutes, stir the mixture of lemon zest and cream.

Ready! Serve with rice or penne is delicious ...

Decidedly I am more often on this blog ... these are the consequences of the transition from student life to professional life! But do not worry everything is going well here in Paris ..
often rushed and a bit lazy, I'll more often catering Greek Mavrommatis (what a delight!) Down with me recently and I order a Lebanese tabbouleh which is simply excellent .. and whose characteristic is be made from parsley.

Taking a desire to cook, I got up early yesterday and I went to Market Monge buy tomatoes, parsley and red onions and evening so I innovated by the tabbouleh ... and I'm very pleasantly surprised ..

You Will need ...

1 cup bulgur
3 tomatoes juicy
3 small red onions
1 large bunch parsley
4 tablespoons olive oil 2 lemons
Salt pepper

A Few easy steps ..

Start bulgur cook for ten minutes. Remove from heat and let cool.

Chop parsley, onions and cut tomatoes into small dice. Mix together in a bowl and add the juice of a lemon. Add salt and pepper.

Finally add the bulgur, lemon juice and pour the second olive oil. Salt and pepper.

You'll see it's perfect for summer and in addition it seems that parsley is good for health!

Hello everyone,

After long months of absence due to a schedule very busy, I come back in great shape and more motivated than ever. I started my first job at Deloitte and tomorrow is tomorrow's "Big Day". Right now, all my close friends have decided to go around the world: NYC for some more exotic or South Korea, South Africa, etc.. . So to "celebrate" one of those departures - one of my best friend Sophie that we made a picnic on the Champ de Mars yesterday. As I often enjoy these festive occasions to test new recipes, I tested a "cake - goat tomatoes" which was quite appreciated!

You Will need ...

5 cl dry white wine
10 cl olive oil extra virgin
5 cups milk 3 eggs
100 g of grated cheese 150g
Chavroux
150g
flour 1 teaspoon baking
Tomato Confit (Monoprix gourmet jar)

This recipe is very easy to make!

First preheat your oven 180 ° C.

Mix in a bowl the eggs, olive oil, milk and dry white wine.
In another bowl, mix yeast and flour.
Combine the two mixtures and add both cheeses and tomato confit.
Bake for about 50 min.

Ready!

You Will Need ...

rhubarb 500g (without the leaves are toxic)
60g white sugar 1 vanilla pod
a golden apple

Compote ...

First peel the stalks of rhubarb. Cut into small sections of 2 / 3 cm.

quick post before the weekend which continued for some days I go in my hometown of Montpelier.
I take a brief moment of respite for you with a recipe taken from Cook Jamie Oliver and is really very simple as I did tonight for the first time .. I was very happy with the result . A flat "No Mess, healthy and good."

Finding myself with a zucchini that I wanted of course not waste, but not having much time to cook for all that, I remembered that Jamie gave some simple recipes in Cook - probably my favorite cookbook ..- on how to cook zucchini . According to him, perfectly combine the zucchini with olive oil, garlic and mint ...

You Will need ... (for one)

1 zucchini medium
1 small clove garlic
Juice of one lemon
Salt, pepper and cayenne pepper

2 seconds and it's ready!

Start by cutting your zucchini and thin slices, keeping the skin.
Cut garlic into small pieces.

Heat your pan with olive oil and add garlic. Allow to brown for 2 minutes and add zucchini. After 3 minutes of cooking, when almost ready, add lemon juice, season and stop the fire.

Stir again for 2 minutes and it's ready!

having almost nothing to me, I served with the fusilli with zucchini e Cecco and parmesan ... What a treat!

After this long day of classes, here I am in these times of rain with me doing things I should do for a very long time : answering emails, make appointments, and of course sort out some old photos ...

I give you a picture here fairly recently, however - it dates from Saturday night .. - Which we watch with my friend Vincent and one of her friends with the owner of a great Greek restaurant near my house - Aphrodite Delights . A very nice overview of Mediterranean cuisine and a mix of cultures at the table very interesting to share our different backgrounds!

Having decided at the last moment to make a small restaurant on Saturday night and wanting to innovate, so I suggested going to this address which I had only had very good feedback and offers an excellent Greek cuisine and superb wine list.

This is not without recalling the sweet memories of my childhood when we used to with my father and my aunt enjoy moussaka and souvlaki other in small taverns in the Greek islands where we went on a trip every year ..

It's pretty funny to see my friends and I have a little bit the same tastes: we took the same inputs - tzatziki and dolmotès (vine leaves ...) - the same dishes - the Souvla (lamb roasted on a spit of oats and pasta) and the same dessert ..
Certainly we have not really been able to compare the dishes, but we found that everything was really very good, in a warm and pleasant enough in fact secret (the restaurant is hidden in a small street near the church of Saint Medard ..).

I recommend it very strongly. Personally, I hope to return very soon ...

Last week - upon my return from the United States - I received as a gift back (on my part ...) a little card to my florist - The Ebony Garden, Paris V °: an assortment of fresh vegetables ordered the previous week on tousprimeurs.com .

I found this site quite fantastic in that the products are of excellent quality and that it "requires" in a way to eat vegetables! Indeed, how many times I found myself in Pomi, the gardener of the Rue Mouffetard - to contemplate all their vegetables, but not to buy anything in the end, having no inspiration ..

At least with my box of vegetables, one thing was certain: I had to cook carrots and zucchini this week. With a constraint, however: a presentation of economy that would take me many many time ... So I decided to make a very simple recipe with my pressure cooker but I enjoyed it so much!

You Will Need ..

800g carrots
a teacup of rice
2 cups water 1 onion
75 g butter
1 teaspoon cumin Salt and pepper

With your pressure cooker ...

Peel and slice carrots, chop onion and wash the rice.
In casserole, place 20g of butter and sweat the onions without browning, add the carrots and rice. Pour water and season. Close the pressure cooker.
As the steam escapes, reduce heat and cook about 10 minutes.
Carefully open the pot, mash in a blender and add remaining butter.

is delicious and really easy to do!

Even before starting my real passion for cooking - which is increasing daily in contact with the Food Network, a 100% food chain, with TV stars - I already loved prepare these little honey cookies inspired by a children's book - one of my little sister Emily - bought when she was tiny ...

These biscuits with honey, delicious and melting, and very easy to do. It is indeed a cookbook for kids ... but I still love that!

You Will need ...

180g flour self raising
(1 packet of yeast if the flour is not self-raising )
120g butter 120g sugar
1 yellow
egg 1 tablespoon honey
1 teaspoon cinnamon

3 minutes of preparation ...

Preheat oven to 175 ° C.
In a bowl, mix sugar and butter. Then add honey and cinnamon.
Pour the egg yolk in preparation, then all the flour.
Train about 25 small balls and roll the dough balls on a plate with a little sugar and cinnamon.
Arrange future cookies on a plate with wax paper and put them in the oven for 15 min at 175 ° C.

Warning ... We must let the cookies rest as if they ended up cooking outside the oven. The temptation is great to give them to the oven for a few more minutes, but it is useless ... I think I made the rookie mistake many times ...

I'm really happy because today I went to a beautiful place near us (in Philadelphia) called Land. This is a concept store created by the founder of Anthropology (my favorite store in Los Angeles ... good memories!) which is actually a nursery / cafe / shop decoration. As
in 99% of stores, the section that interests me most is that where the cookbooks: some say that I collect them, but I do not think so .... I love having new cookbooks!
My new discovery: "The Hummingbird Bakery Cookbook " superb book-inspired pastries American and British written by the founder of the eponymous bakery in London.
I will greatly inspire me and I thank my dear mother who has kindly bought me ....

I only have a few more days in the U.S. so I certainly benefits again and again to test new recipes. Right now, pies inspire me greatly: what a pleasure to prepare the pastry in minutes with the Kitchen Aid and then my mom to see her pie baking and embalm the house smells of Provence ...

I give you today this new recipe that is really excellent and very easy to do ..

You Will need ...

1 kilo of ripe tomatoes
a homemade pastry
Thyme, basil
a ball of mozzarella
1 jar of tapenade
Salt, pepper Olive oil

Preheat oven to 200 ° C.

Start by cutting the tomatoes in half and remove the juice and seeds.

Place the tomatoes on their backs "in your pan pie in order to cover the mold. Add salt and pepper and drizzle with olive oil and fresh thyme.

Cook the tomatoes in the oven for 35 min. Remove from oven. Lay thin slices of mozzarella over tomatoes to your liking.

Spread the pastry with tapenade. Cover the pan with the dough, tomato tapenade on the side and tuck the rest of the crust in pan.

Bake for 40 minutes. Then put a large plate over pan and invert it. Be very careful, because you can be burned with the tomatoes .. Aw ..

Here's your apple pie! I assure you it is a treat.
